NOW YOU’RE COOKIN’: FROM SCRATCH

WHO BreadThis past weekend I got a sudden craving for fresh-baked bread.

Fresh-baked bread without spending all day making it, I should say.

I dusted off the bread machine and set my mind to making a loaf.  Then realized that the recipe book that came with my machine was missing.  I have looked everywhere!  It is still no where to be found.

Luckily, one of my lovely facebook followers came to the rescue.  Thanks Samantha!

She recommended this recipe for WHO Bread, which I assume stands for Wheat Honey Oat.

WHO Bread from SouleMama
{makes 1.5 lb loaf, set to ‘basic’ with medium crust}

1 1/4 cup water
2 tablespoons honey
2 tablespoons butter @ room temperature
1 tsp salt
3 cups of flour (2 cups unbleached white, 1 cup whole wheat)
1/2 cup rolled oats
1 tablespoon brown sugar
1 tsp cinnamon
2 1/4 tsp active dry yeast (or, one package)

Layer ingredients in bread machine – starting with water and working to yeast.  Set loaf size to 1.5 pounds, crust to medium and use the basic white setting.  Close the lid, hit start and your done!

The machine does the work for you, leaving your day free for more important things – like dessert!

Although I have to say that this bread is so good and slightly sweet that it could be dessert.

Waiting of your loaf to cool is torture!

Banana Oatmeal Chocolate Chip

I have been on a bit of a baking binge this week.

Brownies, Apple Pie and now cookies.

These cookies came about because I only had one egg and an abundance of over ripe bananas.

Anyone else have a stockpile of these in their freezer?

Yep, that is where we keep them.  In the freezer.

When bananas start to get brown and too mushy to eat, don’t throw them out.  Throw them in the freezer.

They will turn black – don’t be alarmed – they are perfectly fine.  The flavor actually intensifies in the deep freeze.

When ready to use, just pull one out and microwave in the peel for a few seconds to thaw.  Cut off one end and squeeze out the goodness.

Little stack of heaven!

This is one of my favorite cookie recipes.  I don’t even recall how I came to possess it.  It must have come in the mail with my Martha Stewart subscription.  My old Martha Stewart subscription.  I finally let it lapse a few years ago.  It was liking breaking up with my first love.  Actually that was easier than letting go of my beloved magazine.

Anyhoo… this little recipe card is well loved and used.  You will have to forgive the bits of dough and splatters.  At least you know it has been tested.

NOW YOU’RE COOKIN’: MEATLESS MONDAY {Baked Mac ‘n Cheese}

This isn’t much of a recipe, but as you know I don’t really follow recipes so it’s hard for me to come up with one.  I primarily cook by taste and feel, letting the dish develop as I go. Homemade mac ‘n cheese isn’t hard by any means and it tastes way better than that [...]

BAKING FROM SCRATCH: Chai-Spiced Cookies

Thumbnail image for BAKING FROM SCRATCH: Chai-Spiced Cookies

Chai is the Hindi word for tea made with milk and spices such as cardamom, cinnamon, cloves, ginger, nutmeg and pepper. These cookies don’t contain pepper, but they do have all the other spices and would be great with a big ol’ glass of milk. I made them strictly for Mister.  They’re too dry for [...]

I love soup. If I were on death row, my final meal request would be soup with a big glass of cold milk.  Perfection. My favorite soup of soups is Minestrone.  Light, yet hearty and loaded with veggies. For as much I love soup, I rarely make my own.  Other than potato and chili, but [...]

I am still cooking from the Pillsbury Pot Pies & Casseroles 2010 magazine, albeit using none of the products they suggest.  You’re probably tired of me talking about it, but then that’s a perk of having your own blog.  You get to talk about whatever fancies your imaginations, as much and as often as you [...]
