Welcome to Midnight Maniac Meatless Mondays {MMMM}!

Hear hear! For the first Meatless Monday of the new year!  Have you made any resolutions for 2011?  Is Meatless Monday one of them?

I don’t really make resolutions, but even so the flipping of the calendar is full of hope and promise.  A whole new year of opportunity lies ahead.  What will you do with yours?

I will continue to make home-cooked meals for my family.  Full of love and healthy vegetables.  And we will continue to cut out meat minimally one day a week.  Reducing our meat consumption allows me to channel more money towards organic and local foods.  It also pushes me to be creative with my cooking.  My family gets nutritious meals made from whole foods and I get peace of mind knowing we’re improving our personal health and the health of the planet while doing it.

I will also continue to host Midnight Maniac Meatless Mondays in hopes of inspiring others to do so and to find inspiration myself.  Like these submissions from last week:

Thanks for following along on our Meatless Monday journey.  I learn something new every week and very much look forward to seeing what you’re cookin’ in 2011.  Cheers to you!

Here’s how it works.

MMMM is a weekly carnival dedicated to those interested in improving their personal health and the health of the planet by reducing meat consumption one day a week.  Every Monday you have a chance to feature a link to something meatless. It doesn’t have to be a recipe {although that would be nice}, it can be a picture of a meatless meal you ate that week, an interesting article you read about meat consumption, a post on your blog about going meatless, perhaps a post on someone else’s blog you found helpful {ask permission first!}, anything Meatless Monday appropriate.

Choose something meatless you would like to feature for the week.  A Meatless Monday post on your own blog would be ideal.  {Just so you know, your meatless meal doesn’t have to be on a Monday.  That’s just the day I chose to feature them.} Come back to Midnight Maniac every Monday and add your link to the linky box below.  The linky box features thumbnails with your link, so be prepared to add a picture.  Just follow the prompts – it’s easy!

      Just got your Twitter follow and am following you now too. I think your New Year’s resolution is a great one.

      We’re kinda in the same boat. While I’m not a vegetarian, I do prefer it to eating meat. Mister is more of a carnivore than I and the kids lean more in that direction too. I’ve been substituting fake meats for a while now, but am hoping to gradually phase them out and go all veg.

      I’ll be following your progress throughout the year. I hope you will join us weekly with the recipes you convert. Now I’m off to check out your site.

    Happy New Year! I haven’t had a meatless recipe for awhile to link up, but I thought I’d add my cheese ball recipe today. It’s a little holidayish, but I still wanted to participate so I hope that’s okay:)

      Of course it’s okay, Kari. We eat cheese year round, albeit not in ball form. I’m a little embarrassed to admit I have never had cheese this way. What kind of people am I hanging around with? Better yet, what kind of host am I? Every holiday party should have a cheeseball! Next year mine will too.

    I wish I had something great to add, but we ended up eating from our cupboard. We had pasta with “kitchen sink sauce” which is bottled sauce with any veggie I have in the fridge added in. I need to make a new resolution to make something interesting on Meatless Mondays.

      We had the same thing Kellie! How pathetic is it that the only “vegetables” I had on hand were onion and mushroom? Do you find it ironic that I’m hosting a Clean Out the Cupboards challenge when my cupboards are bare? I do. I do have lots of unused stuff to use up though – honest! Just not veggies. They never last long in this house.
