Welcome to Midnight Maniac Meatless Mondays {MMMM}!
MMMM is a weekly carnival dedicated to those interested in improving their personal health and the health of the planet by reducing meat consumption one day a week. Every Monday you have a chance to feature a link to something meatless. It doesn’t have to be a recipe {although that would be nice}, it can be a picture of a meatless meal you ate that week, an interesting article you read about meat consumption, a post on your blog about going meatless, perhaps a post on someone else’s blog you found helpful {ask permission first!}, anything Meatless Monday appropriate.
Last week I found myself drawn to things people normally buy, but are so simple to make at home. Oh! And these beautiful carrots! They were just too gorgeous to pass up.
I was well into my adult life before I realized that a can is not the only place to get cranberry sauce. Who knew you could make your own?
It wasn’t until the past few years that I started making my own soup. That always came from a can too.
And, it wasn’t until last week’s carnival that the thought of making my own breakfast biscuits came to mind. Duh.
For me, this carnival is so much more than just reducing meat consumption. It has opened up a whole new world of cooking possibilities. Every week I move further from the grocery store and delve deeper into my own kitchen. Thank you for that.
Now let’s see what you’ll teach me this week.
Here’s how it works.
Choose something meatless you would like to feature for the week. A Meatless Monday post on your own blog would be ideal. {Just so you know, your meatless meal doesn’t have to be on a Monday. That’s just the day I chose to feature them.} Come back to Midnight Maniac every Monday and add your link to the linky box below. The linky box features thumbnails with your link, so be prepared to add a picture. Just follow the prompts – it’s easy!
If you’re featuring a post from your own blog help spread the word by linking back to this {http://midnightmaniac.com/post2127} Midnight Maniac Meatless Mondays post. You can also grab the button below:

Hi April,
Your vegetable tart looks so good! I love all the colors. It’s so pretty.
Super easy to make, makes it even better.
Next time we have homemade pizza I’m serving this up as the appetizer.
Thanks for sharing it!

Don’t get weirded out by my photo of the Betty Crocker box above!!! The post is a rant about said product and a recipe for a suitable, homemade alternative. LOL

Dear Rebecca Jean
Thank you so much for the nice comments you left on my blog, and thank you so much for featuring my Cranberry Sauce recipe this week! This year, I made a double batch of it because everyone wanted to take some home with them (my secret? I’m extra generous when it comes to measuring out the sugar in the recipe, lol!) I hope you had a fabulous Thanksgiving with your family. I’m looking forward to all of the great shares as we move into the Christmas season!
Have a fabulous week!
