Welcome to Midnight Maniac Meatless Mondays {MMMM}!
MMMM is a weekly carnival dedicated to those interested in improving their personal health and the health of the planet by reducing meat consumption one day a week. Every Monday you have a chance to feature a link to something meatless. It doesn’t have to be a recipe {although that would be nice}, it can be a picture of a meatless meal you ate that week, an interesting article you read about meat consumption, a post on your blog about going meatless, perhaps a post on someone else’s blog you found helpful {ask permission first!}, anything Meatless Monday appropriate.
Some standouts from last week are:
I actually made this using cranberries in place of blueberries and have been enjoying it all week.
One of these days I will get around to using lentils. Perhaps with this recipe – it looks so good!
I love it when people take what are believed to be traditional meat dishes and adapt them for Meatless Monday.

Choose something meatless you would like to feature for the week. A Meatless Monday post on your own blog would be ideal. {Just so you know, your meatless meal doesn’t have to be on a Monday. That’s just the day I chose to feature them.} Come back to Midnight Maniac every Monday and add your link to the linky box below. I love meatless mondays! Just found you at From Apples to Zucchini and I love your blog — and just started following your RSS feed! I’ll hope to have a meatless Monday entry for you next week.
Also, five-spice powder varies depending on the manufacturer, but I found mine at Krogers. It’s awesome for Asian cooking

Mister enjoyed the cranberries in it, but I’m more of a blueberry person. I think chunks of apple with cinnamon would be good to. It’s a great recipe to customize.
