Happy Meatless Monday Y’all!

Thanks to those who have been regular participants in my little Meatless Monday carnival and welcome to any newcomers!  So glad to have you here.  Did you see last week’s entries?  I’m thinking we have some sweet tooth’s in the bunch.  Myself included.  Whole lot of dessert going on!  Not that I mind, dessert is my favorite meal of the day.  And who doesn’t love to bake on a cool fall day?  I think it’s preprogrammed in our DNA.

Some of my favorites from last week are:

Pumpkin Oatmeal Breakfast Cookie from Family, Stamping and FOOD!

Cookies for breakfast? Yes, please!

Broccoli Chowder from The Delshad Duo

Vegan Broccoli Chowder

‘Cause I’m a soup fiend. And it’s Vegan!

and

Fennel-Tomato Salad with Fresh Basil and Olives from Graasland

With summer gone so quickly, I’m wishing I had it back and craving crisp salads.

I’m looking forward to more yummy Meatless Monday inspiration from you this week.  Let me see it!

Welcome to Midnight Maniac Meatless Mondays {MMMM}!

MMMM is a weekly carnival dedicated to those interested in improving their personal health and the health of the planet by reducing meat consumption one day a week.  Every Monday you have a chance to feature a link to something meatless. It doesn’t have to be a recipe {although that would be nice}, it can be a picture of a meatless meal you ate that week, an interesting article you read about meat consumption, a post on your blog about going meatless, perhaps a post on someone else’s blog you found helpful {ask permission first!}, anything Meatless Monday appropriate.

So here’s how it works.

Choose something meatless you would like to feature for the week.  A Meatless Monday post on your own blog would be ideal.  {Just so you know, your meatless meal doesn’t have to be on a Monday.  That’s just the day I chose to feature them.} Come back to Midnight Maniac every Monday and add your link to the linky box below.  The linky box features thumbnails with your link, so be prepared to add a picture.  Just follow the prompts – it’s easy!

If you’re featuring a post from your own blog help spread the word by linking back to this {http://midnightmaniac.com/post1706} Midnight Maniac Meatless Mondays post.  You can also grab the button below:

Thank you so much for hosting! I’ve linked up a bit of a sweet recipe this week, but it uses all those great autumn apples that are so abundant right now in a really delicious way. I love the look of the recipes you have featured from last week! Have a great week.

I am having a great week, thank you, April.

You know, I have never made homemade applesauce. I just watched Ina Garten do it yesterday. How simple! Yours is a more sophisticated version though.

Thanks for linking up with me again this week.

Hope you don’t mind that I am submitting two this week. It was too hard to pick just one!

Not at all, Emily. The more the merrier!

I would have a hard time choosing between your Ricotta Pasta with Spinach and Vegetarian Chili too. Although I think your chili is winning out. I’ve been craving vegetarian chili for some time now, but keep forgetting to soak my beans so I can make it. One of these days.

      Thanks for adding your links!

Yah, that’s what I was thinking about your Grain-stuffed Acorn Squash!

      Thanks for adding it!

What a terriffic idea this is! This is my first time here, and whoops, I put the name of my blog instead of the name of my recipe on the Linky! The recipe is for Vegetarian Shepherd’s Pie. Have a great week, everybody!

      Well, welcome Judy!

I got you all fixed up.

Shepherd’s Pie has never made it onto my Meatless Monday radar, but it’s a great idea. That’s what I love about this blog carnival. So many new things to try!

Thanks for joining Midnight Maniac Meatless Mondays!
